I bake my holiday cookies this weekend and we really want to make this cookie again. Sorry I can not find the recipe anywhere! This does not mean Martha Stewart, but it is probably very similar. Ingredients Cappuccino Cookies Ingredients 1 cup butter, softened 2 cups brown sugar 2 tablespoons milk 2 tablespoons instant espresso or coffee granules 2 eggs 1 teaspoon rum extract 1 / 2 teaspoon vanilla 4 cups flour 1 teaspoon baking powder 1 / 2 teaspoon ground nutmeg 1 / 4 tsp salt chocolate sprinkles (optional) or melted semi-sweet chocolate chips (optional) or white chocolate chips (optional) Directions Beat butter in large bowl with electric mixer at medium speed until smooth. Add brown sugar, beating until well blended. Heat milk in small saucepan over low heat, add coffee granules, stirring to dissolve. Add milk mixture, eggs, rum extract and vanilla to butter mixture. Beat on medium speed until well blended. Combine flour, baking powder, nutmeg and salt in large bowl. Gradually add flour mixture, butter mixture, beating at low speed after each addition until blended. Shape dough into two logs about 2 inches in diameter and 8 inches long (the dough is soft, sprinkle lightly with flour if too sticky to handle). Roll logs in chocolate sprinkles, coating evenly, or leave plain rolls and dip in chocolate after baking. Wrap each log in plastic wrap, refrigerate overnight. Preheat oven to 350 ° F Grease cookie sheets. Cut into 1/4-inch-thick slices; place an empty space on cookie sheet. Bake 10-12 minutes or until edges are light golden. Transfer to wire rack to cool. Dip plain cookies in melted semisweet or white chocolate. Hazelnut Espresso Cookies This is a piece of heaven. Got it from one of Martha Stewart's episode that showcased the 10 BEST COOKIES. I think if I am not mistaken, this recipe was on top of the list. 2 Vanilla Wafers 1-2 tsp nutella, chocolate hazelnut spread 1/4-1/2 teaspoon instant espresso coffee granules Directions Spread 1-2 teaspoons nutella on the flat side of a vanilla wafer. Sprinkle 1 / 4 to 1 / 2 teaspoon espresso granules on the wafer with nutella. Put another vanilla plate on top (flat sides together). Let cookies sit at least overnight to ensure espresso granules have "dissolved".
